White teas are the most delicate of teas and subtle in flavour. Only the best and youngest part of the tea plant is ever used for white tea – preferable with the soft short hair or down still attached. The leaves are then either dried or steamed and dried. As the leaves are neither pan fired or oxidized, they remain almost unaltered. The flavour is subtle and should be carefully appreciated.  Studies have shown that white tea contains antiviral and antibacterial qualities, which make it helpful in fighting against disease--so if you think you're coming down with a cold, white tea is a great way to feel better. In addition, people who consume white tea tend to have lower blood pressure, higher amounts of 'good' cholesterol, and even better skin (the antioxidants in white tea are able to 'attack' free radicals, which harm your skin and cause it to age faster).

Brewing:  Heat the water to just below boiling point and then let it stand for a few minutes to cool.  Pour it over your tea leaves and steep for 45 seconds to 1 minute.  With the more delicate green and white tea leaves if you use water that is too hot you can scald the tea causing it to taste bitter.
