Brewing the perfect cup of tea means extracting the flavour from the tea leaves without the bitterness created from over steeping. Here are some guide lines to help you brew that perfect cup of tea! Tea leaves infuse freely and much faster than if the leaves are constricted to a tea bag or tea ball. The cut of the leaf also affects the steeping time. A full leaf loose tea requires a longer steeping time than smaller cuts usually found in tea bags. Always remember to brew to your taste buds. I have included a guide line after each tea to get you started. Experiment with different teas at different water temperatures and vary the amount of tea you use. To begin, use one teaspoon for every cup of hot water.
All teas come from the same plant, camellia sinensis. Teas are then classified in four major categories: White, Green, Oolong or Black. The colour of tea is the result of the chemical changes that take place when the leaves are given time to oxidize before drying.
Rooibos, Mate, Herbal, and Fruit Infusion teas are technically not teas as they do not contain the tea plant camellia sinensis. These teas are also called Tisanes.
TEA TASTING PARTIES!
Do you want to do something special with your next book club meeting or bridal shower? Tea tasting parties are a lot of fun. Anytime you have four or more people come and experience a variety of great tasting teas.
How it works Each person selects a tea and everyone has a chance to taste them. You will receive your own personal card with all the teas listed. This gives you the opportunity to rate each one you try. Each person goes home with a small round tin of their favorite tea! The cost per person is only $5.00.
For those who want to indulge, desserts are a special price of $2.50 during tea tasting parties. To ensure you have uninterrupted fun, I recommend booking outside regular tea house hours. Book any evening or anytime Monday to Wednesday.
To truly enjoy this experience plan on staying up to 2 hours or more!

If you can't visit but would still like to try some of our teas you can order by fax, email or phone. Cost will be as indicated in the following chart plus actual shipping costs.

I sell all the teas I serve in tins. There are 3 different sizes of each in round or square tins. The prices depend on each individual tea and its cost. If you look at each tea listed you will see a number from Premium 1 to Premium 4 or Rare after it. #1 is the least expensive with Rare being a more rare tea. Following is a chart showing the cost for the different sizes and premiums.
