PU-ERH

Produced in the region of Yunnan in a small town by the name of �Pu-Erh�. This tea is often placed in a category of its own separated from white, green, oolong and black teas due to the aging of the tea as well as the double fermentation. Pu-erh is the only tea that is intentionally aged, becoming more expensive and desirable the older it gets. There has been a lot of speculation about the exact processing of this tea, as it has remained a long kept secret in China. Pu-erh tea is a living tea that becomes alive during an amazing artisan process that facilitates the development of active yeast cultures that thrive in true pu-erh tea. The two beneficial yeasts - which create the unique character of Pu-erh tea are known as the yellow and white yeast types. During the hotter months of the year, yellow yeast is in its most active state and thrives. This is the reason why Pu-erh tea is called �after oxidized tea.� It is during these hotter seasons that Pu-erh tea continues to oxidize. In order to manipulate the humidity critical for the processing of this tea, Pu-erh is stored in caves high up in the mountains of Yunnan for several months.

Orchid Oolong
This tea from the Guangdong Province of China is one of the world�s most exquisite teas. Enjoy haunting orchid floral notes with a pale green yellow liquor infusion. These teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then re-infused and tea is poured after one minute. These leaves many be re-infused several times, with each resulting infusion yielding different liquor from the proceeding cup.

Formed Tea Bricks
Literally comprised of tea pressed into a rock solid brick, these wonders of the tea world are extremely popular in Tibet. Tibetans use them to brew a thick tea that is mixed with salt and yak butter. If you aren�t a fan of yak butter, tea bricks make a unique display item, an interesting addition to tea-themed gift baskets or a one-of-a-kind gift on their own.

MATCHA GREEN TEA
Matcha, is perhaps the most refined tea available on the market today. From the unique way it is produced to the important place it holds in the cultural life of Japan, few other teas can compare. The first thing you will notice upon opening the packet is that Matcha is finely powdered and looks like an emerald colored flour. This characteristic truly sets it apart from other teas. When brewed, the powdered leaf is not strained or left in the pot, but is whisked into a frothy concoction and consumed. Because the leaves themselves are imbibed, brewed Matcha contains higher concentrations of vitamins and antioxidants than most other teas, green, herbal, or otherwise. In fact, brewed Matcha contains nearly 10 times the polyphenols and antioxidants of regular teas, 2 times the antioxidants of a glass of red wine, approximately 9 times the beta-carotene of spinach, and 4 times that of carrots. *

Compressed and formed into the shape of hearts for ease of transportation, these have been manufactured in China for millennia. A bold taste profile with deep red wine notes. Reminiscent of a seasonal Keemun. Use 1 heart for each 8 to 10 oz serving.

Inuit Herbal Tea
From the Tundra of Nunavik � Northern Quebec


From time immemorial, Nunavik Inuit have used tundra plants for medicinal purposes, and much can be learned from their traditional knowledge of medicinal foods and plants. Inspired by the traditional Inuit blends of tea, the Avataq Cultural Institute has produced five varieties of herbal teas; Labrador, Crowberry, Arctic Blend, Juniper, and Cloudberry to be enjoyed piping hot or icy cold. These blends of tea have been known to have medicinal properties, but it is really their subtle and new fragrance that will enchant you. The Nunavik Inuit take part in all steps of production, from collecting the plants to selling the teas. All profits are given to the Avataq Cultural Institute, an organization that protects and promotes the language and culture of Nunavik Inuit.


Arctic Blend Ukiurtatuq
All parts of the stem, leaves and flowers of the Ukiurtatuq are used to make this herbal tea, which was traditionally used to soothe stomach aches. The infusion has a rich golden yellow colour, with a spicy peppermint taste.
Ingredients: ARCTIIC BLEND (UKIURTATUQ), ECHINACEA HERB, MARSHMALLOW ROOT, PEPPERMINT LEAVES, ELDER FLOWERS, CAMOMILE FLOWERS, CINNAMON BARK, GINGER ROOT, CLOVES, COLTSFOOT LEAVES.

Cloudberry Arpiqutik
Cloudberry leaves were boiled to produce this savoury tea traditionally used for the relief of kidney ailments and stomach aches. The infusion has a tawny amber colour and a wood bark taste reminiscent of maple. A superb and unique herbal tea with a full-bodied aroma and taste.

Ground Juniper Qisiqtutauyak
Ground juniper was traditionally boiled whole to produce a medicinal drink used to treat colds, lung ailments, loss of blood, and bladder problems. The infusion has a golden yellow colour with a camphor taste and a light citrus, mint aroma.

Crowberry Paurngaqutik
Crowberry infusions were traditionally used to settle upset stomachs. The tea has a rich violet colour, a fruity aroma with a light acidic astringent taste of spicy berries.

Labrador Mamaittuqutik
Possibly the most widely enjoyed of traditional teas, Labrador tea was originally prepared as a hot drink for the treatment of respiratory disorders, bleeding and aches and pains. Once brewed, this blend yields an amber tea, with a deeply rich flavor, light aroma, and pleasant comforting taste.
