Oolongs are treated the same way that black teas are, except that the withering and oxidation times are shortened. While black teas are fully oxidized, oolongs are oxidized anywhere between 20 – 80%. The result is a delicious fruity, nutty tea that balances the flavours of black and green beautifully. Oolong is a semi-fermented tea with polyphenol qualities (properties that break down triglyceride fats and allow the body to use it up as energy rather than store it as fat) It is a whole leaf tea that is never broken during rolling. Brewing: Heat water to boiling point and pour over tea leaves. Let it steep for 1 to 2 minutes. Brewing too long will result in a bitter taste.
