Green
teas are the teas that are primarily consumed in Asia.
Japan
for example only produces green tea. Green tea is considered a "pure" tea,
meaning it doesn't undergo an oxidation process. The leaves are placed for
20 to 30 seconds in large iron basins heated to about 100 Celsius. This
operation destroys the enzyme that causes fermentation. The leaves, then,
remain green. In Japan,
this process is accomplished by exposing the leaves to steam. The leaves are
then rolled. As for black tea, the smaller and more tightly rolled the leaf,
the more robust the tea, as more components are released. The drying process
allows some evaporation of the water contained in the leaves to prevent
mould. Finally, sorting is the step where the grades are separated out. Its
health benefits are manifold. Although green tea naturally contains
caffeine, one mug's worth contains less than a fourth as much as the average
cup of coffee. For people trying to cut their caffeine consumption,
switching from coffee to green tea is a very healthy alternative. Scientists
have shown a correlation between green tea consumption and reduced cancer
risk, weight loss, and improved heart health. Green tea also possesses a
small amount of natural fluoride, an element which strengthens bones. And
anyone who has ever had a sore throat can definitely attest to the soothing
power of green tea with honey in it.
Brewing: Heat
the water to just below boiling point and then let it stand for a few
minutes to cool. Pour it over
your tea leaves and steep for 45 seconds to 1 minute.
With the more delicate green and white tea leaves if you use water
that is too hot you can scald the tea causing it to taste bitter.
Most green teas can be infused more than once.
